What type of BBQ do we offer?
Let’s just say that we’re inspired by all of America’s great barbecue traditions, but we’ve created something that’s one-of-a-kind. We’re definitely not Hawaiian BBQ, that’s for sure! We’ve invented flavor profiles and smoking techniques that are uniquely ours, but more in line with Texas (yet we’re not, as we don’t use as much black pepper as they do.)
We are technically pitmasters, but “flavor engineers” feels more accurate as we don’t just smoke meat – we study fire, use smoke as an ingredient, and obsess over texture until every bite hits the way it should. Pyromaniacs with taste buds?
We’re different, good, and fun (had to throw that in there).

Locals love their pork belly. We like to call it bacon brisket as we cook almost the same way as brisket, with almost the same seasoning, and with the same wood – kiawe.

St. Louis ribs are meaty, juicy, and overall, a much better bite than baby back ribs. You don’t need much to fill you up. They go great with sports.

Most barbecue joints don’t smoke salmon. And if they do, they use alder, cedar, or maple wood. We use kiawe, smoke it to a medium rare, it’s rather unique.

Our barbecue sauce goes good with everything – well, except ice cream. Created by accident, we stumbled upon this concoction by luck. Some customers call it their utility sauce.
